What was your weekend like?

Saturday I detailed my car and Sunday, Nancy and I did her car. Between that, we just relaxed and had a nice meal both evenings.

Saturday night we did some boneless pork ribs which had been marinated in olive oil, fresh Rosemary from the garden, lemon juice, salt, pepper and some garlic powder.

I used the marinate feature of my FoodSaver. This is a great feature. You can marinate meats in about an hour instead of overnight.

The device runs through a series of vacuum sealing which opens the pores of the meat allowing the marinade to be absorbed faster. In between, it releases the vacuum and allows the meat to rest.

I pared and cut some potatoes into tiny matchstick size pieces and deep fried them and then sprinkled some Corruption on them.

The other side dish was a shortcut as I made some Stouffer's Spinich Souffle.

I served the sliced pork over the potatoes and spooned some of the juices that collected as the meat rested on top.

I hate the day you know you are going to run out of a daily item and you know you can not replace it for a period of time.

Tonight's show will feature David Homyk, who writes, produces, mixes and plays all the instuments on his new album TRUE STORY. David also appears on the soap opera "All My Children" and has appeared on "Sex And The City", "Tyra Banks" and "One Life To Live".

Also sitting on The Couch will be the band Million Dollar Mouth. They mix stoner rock, Brit-pop, punk, and indie, with a pinch of electro thrown in for good measure, to create memorable music.

    We had barbecued catfish--I am going to do it again and take pics and post the recipe because it was off the HOOK!

  10. I ran out of a daily item this morning and yeah-can't replace it until the end of the week. Not sure what I'm gonna do!!!

    Good Gawd! My truck stinks to high heaven of wet dog and Taco Bell trash not to mention I haven't even cleaned it out of wood dust and general all around dirt and dog hair since going to your wedding.

    How long ago was that Vinny?

    Vinny, I remember very well when, because I also stopped biting my fingernails that trip and have not bit them since. (yes I trim them)
    My whole remembered life, I bit them till they bled many times.
    Now I'm calm!

  29. I have never heard of boneless pork ribs. I have no doubt that it was delicious though - going to try your marinade this weekend.

    Spinach souffle sounds weird. Next time I am in USA (dying to go back to New Orleans!) I will look for it. This time it was Nutter Butter biscuits which were ok but not amazing.
